Chive Tied Steamed Asparagus Tips

Steamed Asparagus Egg

I usually start each day with an alkaline rich, Green juice, made using lots of fresh veg and an added apple or two for a little sweetness. There are some mornings when I just fancy something more but definitely don’t want that sluggish, lethargic feeling that comes from stacks of toast or a bowl full of cereal.

So, here is a delicious, light, healthy, alkaline breakfast.

INGREDIENTS (for two)

10 asparagus tips

2 handfuls of spinach

4 fresh chives

Sprinkling of nutmeg

Pinch of sea salt

2 fresh eggs

HERE’S HOW;

Wrap a couple of chives around 5 asparagus tips and tie in a knot. It may take a couple of goes but those chives are surprisingly flexible yet strong! Place the tied bundles into a bamboo steamer, put the spinach on top and sprinkle with a little nutmeg.

Steaming Asparagus

Boil a pan of water until it’s bubbling, add the salt, then turn the heat down and crack the eggs into it. Place the bamboo steamer on top and simmer for around 3 minutes.

Spoon the wilted spinach onto a plate, lay the asparagus bundle on top and place the poached egg on top of that. Grind some fresh black pepper over the egg and serve warm.
