Berry & Pear Crumble with Clotted Cream

I’ve been asked so many times this week if healthy eating is possible on a budget. I’m a normal, northern girl who shops at Aldi! Yes I buy some of the fancier stuff I use online at Amazon (pink salt / nutritional yeast / raw cacao etc) but I want to make some of these recipes using only supermarket food. To show that healthy can be cheap and simple.

This Berry Crumble with cream contains no flour or dairy. It’s made using almonds and cashew nuts. It’s just perfect for grey, rainy days with lots of lovely warming cinnamon.

Let me know if you try making it!

Today I’m gonna make a pear and berry crumble with clotted cream

This recipe is gluten free, dairy free and contains no refined sugar – all the ingredients I’ve used are from aldi (UK)

Wash and slice 6 small pears and scatter in the bottom of an oven proof dish

Add a packet of frozen forest fruits and spread evenly

Blitz 300g blanched almonds (2 packets) with a tsp cinnamon until they’re finely ground

Add 4 tbsp coconut oil a drop of maple syrup and a twist of salt

Then we’re going to get our hands in there and run the mixture through our fingers until it becomes like a breadcrumb texture

Sprinkle the mixture evenly over the fruit and add a few sunflower and pumpkin seeds

Pop in the oven at 180C for 25-30 mins

Meanwhile add the coconut cream from a tin to your bullet along with 150g cashew nuts, a drop of maple syrup and a pinch of cinnamon

Blitz until it forms a cream, pop the bowl in the fridge

Remove the crumble from the oven and serve hot on a plate

And add a dollop of clotted cashew cream
