Sauteed sprouts with blue cheese and almonds

Sprouts are one of those foods that only ever seem to make an appearance on the dinner table at Christmas. Soggy and overcooked they taste like the worst food ever! But sauteed with a little blue goats cheese and flaked almonds they’re one of my favourite side dishes.

INGREDIENTS – serves 2

125g Sprouts peeled and halved

1 tbsp olive oil

Half a leek chopped

Half a red onion – finely sliced

50g blue goats cheese (now at Tesco)

1 tbsp flaked almonds

Salt and pepper to season

HERE’S HOW

Warm the oil gently in a pan. Add the onion and leek and soften for 5-10 minutes

Add the halved sprouts and sauté for 10-15 minutes until they soften

Add the goats cheese and flaked almonds and continue stirring

Season with salt and pepper and serve warm
