Wilted spinach with baby figs and wholegrain mustard


This is one of my favourite ways to eat spinach! I absolutely hate it being overcooked so it’s essential to take it off the heat just as it begins to wilt. Any longer and you’ll end up with soggy spinach – yuk!

If you can’t find baby dried figs, regular figs sliced in half will work just as well.

INGREDIENTS – makes 2 portions 

10 baby dried figs

100g spinach

Half a white onion – thinly sliced

1 tsp maple syrup

2 tsp wholegrain mustard

1 tbsp coconut oil

Salt and pepper to season


Melt the coconut oil in a heavy bottom pan

Add the maple syrup and onion and cook gently over a low heat for 5-10 minutes until soft

Add the baby figs and spinach to the pan and cook for 1-2 minutes until the spinach begins to wilt

Add the wholegrain mustard, stir well and season with salt and pepper

Remove from the heat before the spinach has completely wilted and serve warm
