Swedish Spiced Red Cabbage


This recipe is inspired by my beautiful Swedish friend Madeleine. Christmas eve in Sweden is spent enjoying a giant smorgasbord of tasty, traditional foods. Many recipes include meat or fish and these are accompanied by a selection of breads, crackers and typical vegetable side dishes.

The following recipe is for Swedish Spiced Red Cabbage and Apple. It has a delicious sweet and sour flavour thanks to the combination of honey, vinegar, cloves and allspice. It is served warm and is one of those gorgeous, earthy dishes that has you spooning heaps onto your plate.

INGREDIENTS – makes 2 side dishes

Half a red cabbage – shredded

Half a red onion – finely chopped

1 small apple – cored and diced

1 tbsp coconut oil

1 tbsp red wine vinegar

1 tsp honey

1 tbsp caraway seeds

Pinch nutmeg

Pinch ground cloves

1/2 tsp all spice

1 bay leaf

6 chopped walnuts

Pink salt and pepper to season


Warm the coconut oil in a saucepan and add the red onion. Cook for 10 minutes to soften

Add the red wine vinegar and honey, followed by the red cabbage and apple and cook on a low heat for 10 minutes

Add the caraway seeds, nutmeg, cloves, all spice and bay leaf and season with salt and pepper. Stir the spices in well and continue to warm for a further 10 minutes until the cabbage is tender-soft

Serve sprinkled with a few more caraway seeds and chopped walnuts
