Quinoa Spiced Pear Porridge
Now that we’re coming into autumn I’m enjoying my warm breakfasts again. If you’re a fan of porridge but don’t fancy using traditional porridge oats – why not give this simple quinoa breakfast a try?
Much richer in protein, infused with warming spices and honey, its a wonderful way to start an autumn morning and is guaranteed to keep your tummy full and satisfied throughout the day.
INGREDIENTS
100ml almond or coconut milk
75g quinoa (I’ve used Wyldsson red and white)
Handful of mixed nuts and seeds
Teaspoon of cinnamon
1 chopped pear
1 star anise
Teaspoon of honey
HERE’S HOW
Warm the milk gently in a pan. Add the cinnamon, star anise, chopped pear, honey and quinoa. Simmer for 15-20 minutes allowing the quinoa to soak up the liquid
Remove from the heat and stir in a handful of nuts and seeds. I’ve used almonds, sunflower and pumpkin seeds which are all great for your complexion
Enjoy warm or spoon into a jar and save in the freezer for a simple next-day breakfast
