Broccoli & Black Kale Soba Noodles

Adding this recipe to my blog feels like a bit of a cheat! It’s not a recipe as such, it’s just something I threw together for lunch!! As soon as I put the pic on twitter and insta it got lots of likes, comments, retweets and faves ❤

So I thought I’d post to show you just how simple this protein packed little lunch is to cobble together.

INGREDIENTS

1 head of broccoli

5 chestnut mushrooms

Handful of cashews

3 black kale leaves

Portion of M&S soba noodles

Tablespoon of coconut oil

Juice of half a lemon

Salt, pepper, dried garlic to season

HERE’S HOW;

Warm the coconut oil in a large pan or wok

Chop the broccoli and add to the pan with kale leaves, mushrooms and cashews

Season with salt, pepper and garlic and squeeze over the lemon juice

Boil a saucepan of water and add the soba noodles. Take the water off the heat and leave the noodles to soften for 5 minutes

Add the noodles to the pan of greens, stir through and serve warm
