My two favourite kitchen staples to work with right now are Wyldsson and Lucy Bee. My cupboards are always stocked with coconut oil, muesli, clean trail mix and nut butters. Together they make the most delicious salted caramel, toffee style desserts and this weekend …. flapjacks!
Thanks to @applescrapples for requesting this one. I love flapjacks and my favourite ones are light golden brown on top and chewy in the middle. These are super easy and really don’t take long to make. Perfect for summer (still waiting for that!!) picnics.
400g Wyldsson Original Pro Muesli
50g Wyldsson pro mix (trail mix)
3 heaped tbsp coconut oil
2 tbsp honey
2 tbsp nut butter
Handful of chopped dates
Melt the coconut oil, nut butter and honey gently in a saucepan
Whizz the bananas and dates in a blender until smooth and add to the pan. Stir everything well
Take the pan off the heat and stir the muesli and trail mix through the melted ingredients
Allow to cool just a little, spoon into a flap jack tin lined with greaseproof paper (I like to rub coconut oil on the greaseproof paper to ensure the flapjacks don’t stick when baked) and press the mixture firmly down
Bake in the oven for around 40mins at 170C until the top turns golden brown
Allow to cool and cut into 12 little squares. Then place in the fridge to set further. The coconut oil will fully set and stop the flapjacks crumbling
