Garbanzo Patties + Garlic Hummus

I’m loving the summer weather this week! Rather than cook big, heavy meals, there’s nothing better than creating some delicious mezze or tapas dishes to enjoy with friends in the daytime sunshine.

This is such a simple, inexpensive recipe. You don’t need an absolute ton of ingredients and I guarantee you will absolutely love these garbanzo patties.

Garbanzo is essentially a posh name for Gram or Chickpea flour. If you’re struggling to find it in your regular supermarket, check out your nearest Asian grocery store or buy a bag online.

INGREDIENTS 

Garlic Hummus (enough for 4 people)

2 x tins of chickpeas (400g each)

1 tablespoons of tahini

8 garlic cloves, crushed (warning – this makes it ridiculously garlicy!!) 

1 tsp pink salt

Half a teaspoon ground cumin

100ml extra virgin olive oil 

Juice of one lemon

Fresh parsley 

Twist of black pepper

Garbanzo Patties (makes 4) 

125g gram flour

200ml water

Salt and pepper to season

Here’s How

Drain and rinse the chickpeas under cold water

Add these to your food processor with the tahini, crushed garlic, pink salt, lemon and cumin

Blitz and slowly pour in the olive oil whilst the ingredients combine

Once the hummus is smooth, spoon into a bowl and drizzle in a little olive oil. Add a sprig of fresh parsley and a twist of black pepper to serve

For the Patties

Blitz the gram flour and water together to create a smooth batter

Warm a tablespoon of coconut oil in a heavy bottom frying pan

Spoon in a ladle full of batter and allow to gently spread around the pan

Fry as you would a pancake, flipping after just a minute or two

Serve warm with room temperature hummus. Enjoy in sunshine 🙂
