Pineapple Mojitos ~ mocktail juicing

I’ve been asked to write an article on juicing mocktails. It’s crazy to think it’s been over a year since I’ve had an alcoholic drink. I was a serious party girl and red wine lover! I’ll bore you with the full story one day, but for now I’ve got to share this juice recipe with you.

I make lots of lovely juice cocktails in the summer but since the weather is taking it’s time to warm up, I’d not yet got started this year. Today was the perfect excuse to throw some delicious combinations together and it reminded me just how much I love these pineapple mojitos! Give them a try and let me know what you think.

Pineapple Mojito

(per juice)

1/4 of a small pineapple

1/4 lime

Handful of mint leaves

Chunk of ginger

Sparkling mineral water to top up

Crushed ice

A bright, sweet, zingy, cooling, spicy combination that will have your tastebuds tingling and mouth watering. Not only is this radiant concoction alcohol free, the top up of mineral water will actually rehydrate as oppose to dehydrate you.

Mint promotes digestion. It also soothes stomach ache, indigestion and inflammation. It’s a natural cooler so it actually alleviates the inflammation and temperature rise that is often associated with headaches and migraines. Besides its wonderfully settling properties, mint acts as a natural energiser, perfect for recharging your batteries, particularly if you’re feeling lethargic, nervous, dispirited and drained. So …far from avoiding mojitos on a Monday – we say celebrate and rehydrate with this sparkling beauty.


Wash the pineapple and lime. Gently run a little cold water over the mint leaves and ginger to clean them. Juice everything keeping a few mint leaves or slice of pineapple to one side to decorate. Stir into sparkling water and pour over crushed ice and fresh mint.
