Shredded Super Salad

I love eating salads in warm countries. If you’re spending the day by the pool the last thing you want is a heavy plate of carbs leaving you with a bikini belly all afternoon right?! I somehow never feel like eating quite so much in warmer climates either.

This salad is brilliant. Red cabbage is the best you can eat. The anthocyanins found in this beautiful, bright purple vegetable are well-documented anti-inflammatory compounds. Internal inflammation is the cause of so much sickness, the fact that this little beauty does a ton of stuff to fight it, makes it the perfect base vegetable for a bright, healthy salad.

Cabbage also contains a wide variety of nutrients which are beneficial to our stomach and intestinal linings. And studies show its brilliant for cardiovascular support. In fact it performed 17% better in producing bile acids to lower cholesterol than the prescription drug cholestyramine (a medication that is taken for this purpose).

The dressing comes with it’s own set of health benefits too. Mustard seeds are high in selenium and magnesium. Both give it a unique anti-inflammatory property. If you eat mustard seeds regularly they can control and keep the symptoms of asthma, cold and chest congestion at bay. Plus by making your own dressing you know exactly what’s going into it, as oppose to relying on shop bought, sugar filled brands.

INGREDIENTS (makes 2 salads)

1/4 red cabbage

1/3 chinese cabbage

2 chopped carrots

1 pear

Sprinkling of pine nuts

For the dressing

1 tablespoon wholegrain mustard

2 tablespoons olive oil

1 teaspoon balsamic

1 teaspoon honey


Finely chop both cabbages, the carrots and pear. Throw together in a salad bowl

To make the dressing, add mustard, oil, balsamic and honey to a little bowl and stir quickly with a fork.

Pour the dressing over the salad and mix well.

Sprinkle pine nuts over your salad and serve in the sunshine!
