Porto Pancakes

I couldn’t get enough of these protein pancakes last summer! They’re super easy to make and I never tire of eating them. Back home I’ll throw in a scoop of protein powder or gram flour and whizz everything up in the blender with a little cinnamon, but when I’m travelling I keep it simple.

INGREDIENTS

2 eggs

1 banana

Tsp coconut oil

Fruit and seed toppings ~ you choose!

Lots of fresh lemon juice to drizzle over it

HERE’S HOW;

Whisk the eggs in a bowl using a fork. Mash in the banana to try and create a smooth a batter as possible.

Warm the coconut oil in a pan, pour in the batter. Fry gently for 2-5 mins (depending on pan / heat etc). Flip and fry the other side. Flipping can be a little tricky. I use a fish slice to scoop and flip.

Add chopped fruit, nuts, seeds and a little maple syrup or honey with fresh lemon if you like.
