#BFF ~ Lemon Poppy Seed Muffins

Welcome to the first of our BFFs ~ Beyond Fit Friday’s! With huge thanks to my lovely friend Tony for this idea. In chatting about transitioning to a healthy, clean lifestyle, he suggested it’s often difficult to know where to begin. In the hectic lives we all lead, it’s important to keep things doable. Easy ingredients, simple steps.

With that in mind, here is this weeks BFF recipe. What’s the deal? We make it as straightforward as possible. We post the recipe on Monday, you buy the ingredients by Friday, bake over the weekend, send us your pics by Sunday! It’s all starting to sound a little bit Craig David 🙂

Prep time 10mins ~ Bake time 30mins ~ Oven Temp 160C / 320F

1 Add all the ingredients (aside from the poppy seeds) to your food processor and blitz

2 Stir in the poppy seeds

3 Pour into a silicone muffin tray

4 Bake for 30 mins at 160C (fan oven)

5 Use a skewer to check your cakes are baked through

6 Allow to cool, then eat 🙂

Gluten Free ~ Dairy Free ~ Vegetarian


150g (1 and a half cups) Ground Almonds

30g (3 tablespoons) Rice Flour


Juice and Rind of 1 Lemon

50ml (2 and a half tablespoons) Manuka Honey

Genrous sprinkling Poppy Seeds

Teaspoon of Baking Powder
