Easy Guacamole Dip


This is such a simple recipe you’ll never go for shop bought again! Most guacamole recipes include tomato and chillies ~ these are both nightshades and cause real problems for my skin so I avoid them. Feel free to add them though.


I use a little Kenwood Chopper for my pestos and sauces. It’s less than £20 and it’s one of my favourite kitchen gadgets!  Not only does it chop brilliantly but it’s simple to wash up … and that’s always a bonus.


1 small avocado

Juice of half a lime

Pinch of sea salt

Handful of fresh coriander (cilantro)

1/4 a red onion


Add the lot to your chopper and blitz! You may need a touch more lime juice if your avocado isn’t over ripe. Serve on a rice cake with fresh cucumber and coriander leaves.
