Do you remember those old fashioned sweets you could buy as a kid called chocolate limes? Bright green, lime flavoured candy with a chocolate centre? The combination of lime and chocolate seemed a little odd, but somehow it worked brilliantly! Well thats the flavour I’m trying to replicate. The sharp tanginess of lime, combined with smooth, rich dark chocolate. And it works! Think Ye Olde Sweet Shoppe (but with a whole lot more health benefits!)
INGREDIENTS (makes 10 mini chocolate limes)
1 ripe avocado
1 tablespoon of maple syrup (or manuka honey ~ non vegan)
1 teaspoon melted coconut oil
Small palm full of cashew nuts (preferably soaked in water for 1-2 hours)
For the Bases
40g chopped dates
tablespoon melted coconut oil
2 teaspoons of cacao powder
Avocado is an awesome superfood. With tons of good fats and more potassium than bananas, these beauties have been proven to significantly lower cholesterol.
Combine that with lime, which is incredibly alkaline and one of the best natural preservatives you can find, and you have a super powerful combination. Limes can also lower cholesterol, prevent kidney stones, aid skin health and reduce inflammation.
To make the little chocolate bases, blitz the dates, coconut oil and cacao powder together. The ‘dough’ this forms should be firm. It may be a tiny bit crumbly, but once you roll it in your hands it should stick together nicely.
Roll it into little balls and press flat to create chocolate discs
Blitz the avocado, the finely grated peel of half a lime and juice of half a lime together with the maple syrup and coconut oil, until it forms a smooth mousse. You may like to add a drop or two of water depending on how ripe your avocado is. Depending on your tastebuds you may want to add more lime juice or syrup. The tanginess of the lime and sweetness of the syrup works well and will hide the taste of the avocado.
Use a teaspoon to scoop a little mousse onto each of the chocolate bases. Grate lime peel over your chocolate limes and leave them in the fridge to set.
