I absolutely can’t wait for summer! It’s my favourite season. Long sunny days, breakfast, lunch and dinner outdoors. Just wonderful! I know it’s not yet spring and that I’m getting ahead of myself, but the awesome thing about making ice-cream is that you can freeze it ~ obviously!
Tropical flavours such as mango and passionfruit are delicious. Try adding papaya or pineapple or anything else you fancy as an alternative.
1 tin coconut milk (400ml)
100ml manuka honey
Blitz everything aside from the passionfruit in your blender or food processor. Scoop the fruit from the passionfruit and stir it in. Pour the mixture into your ice-cream maker and follow the guidelines to turn it into ice cream.
For extra tanginess, serve with passionfruit drizzled over it.
