My favourite breakfast these days is a vibrant, bright, alkaline green juice! Consisting mainly of green veg with a little fruit for sweetness. There are some days when I appreciate that only a really warm, hearty, filling breakfast will do! And that’s where this delicious breakfast pot comes in.
A combination of gluten free oats soaked in coconut milk, raisins, cinnamon, almonds, seeds, chia and berries oh and a lovely drizzle of maple syrup. Yum!
60g of gluten free oats
Handful of raisins
Teaspoon of cinnamon
Small handful of almonds
Sprinkling of pumpkin and sunflower seeds
Handful of winter berries
Drizzle of maple syrup
100ml coconut milk
100ml Water (add more if you like)
Warm the coconut milk and water in a pan. Add the oats and stir while warming gently. Add the raisins, almonds and cinnamon and continue stirring for 5 to 10 minutes.
Spoon the porridge into a dish, heap two tablespoons of chia jam on top, add your berries, a drizzle of maple syrup and sprinkling of seeds. Warming, delicious and healthy!
