Home made pesto

So simple and fresh, you’ll never go for shop bought again

A simple pesto pasta has long been my favourite dish. It was something I stopped eating when I changed my diet as so much shop bought pesto contains potato and sugar. It’s also often made using sunflower or vegetable oil. This nutty, zesty, homemade version contains no sugar or potato and only the finest extra virgin olive oil. SO much tastier its unreal!


Makes one small but strong tasting jar

Large handful of basil leaves

3 Tablespoons of extra virgin olive oil

50g of parmesan cheese (cut into rough chunks)

Juice of half a lemon

1 clove of garlic

a pinch of coarse sea salt

50g Pine nuts

30g Macadamia nuts


I love my pesto nice and nutty!

Add all the ingredients to a food processor and blend. Simple!

Your pesto can be as creamy or nutty as you like! Simply blend less for more texture, add a little more cheese and olive oil and blend longer for a smoother finish.

Either way – delicious!
