I am a little in love with ginger and cinnamon. There’s something about these two delicious winter flavours, super warming spices, so insanely tasty and combined with sweet english apples and juicy sultanas – just heaven.
INGREDIENTS
100g rice flour
180g ground almonds
100g manuka honey
2 juiced apples and a chunk of juiced ginger
3 eggs
1 tablespoon baking powder
2 heaped tablespoons cinnamon (more or less depending on preference)
120g sultanas
Large handful flaked almonds
Pre Heat the oven to 160oC
Whisk the eggs until light and fluffy. Juice a couple of apples and a chunk of ginger. Pour the whisked eggs and juiced apples into to a mixing bowl and stir in all the other ingredients.
Ensure everything’s thoroughly mixed together and well combined.
Grease a cake tin with coconut oil and pour the cake mixture in.
Bake in the oven for 50 mins to 1 hour. Use a skewer to check the cake’s well cooked through. If the skewer comes out clean the cake’s good to go.
